Parmesan Crust 1 each 4"    
Roast Wild Mushrooms 1/4 cup / 1 oz wt    
Wild Mushroom Tart Custard 2 fl oz    
parmesan, reggiano, grated 1 tsp    

Place tart shells in pans on parchment lined sheet pan.

Place mushrooms in pre-baked tart shells.

Fill with custard.

Sprinkle top with cheese.

Bake at 300 convection 10-12 minutes until just done, and slightly puffy.

Let cool to room temp or can serve immediately. Refrigerated until needed.

Re-heat for line use as needed.
