Sensitivity: Prep mushrooms as directed by Chef. Be sure mushrooms are clean!

assorted wild mushrooms, cleaned coarse prep 5 lb wt 15 lb  
olive oil 1/3 cup 1 cup  
thyme, fresh minced 1 TBSP 3 TBSP  
salt mix 3:1 2 tsp 2 TBSP  
black pepper, fresh ground fine ½ tsp 1 ½ tsp  

In 2" metal hotel pan place mushrooms and then drizzle with oil. Add remaining ingredients and toss well to coat.

Place in preheated 400° convection oven with fan on for 15-18 minutes, until cooked through.

Place in a clean container. Label, date, initial and refrigerate.
