Horseradish Mustard Sauce 1 ½ fl oz    
arugula, cleaned ½ oz wt    
frisee, cleaned ½ oz wt    
Champagne Vinaigrette ½ fl oz    
Smoky Beef Carpaccio - paper thin 2 oz wt    
tomato, diced ¼" 2 TBSP    
egg yolk, cooked, sieved 2 TBSP    
chives, chopped ½ tsp    
horseradish, fresh grated ½ tsp    

Zig zag sauce across plate.

Toss arugula and frisee with vinaigrette. Place in center of plate in a nice tight dome.

Slice beef and enclose greens, laying slices slightly overlapping, finish with a slice on top.

(ask chef to show you, this is a little tricky)

Place 2 little piles of egg at opposite sides of plate.

Place 2 little piles of tomato between eggs at opposite sides of plate.

Place horseradish in center of carpaccio, sprinkle sauce with chives. Serve.
