Saffron Aioli 1 fl oz    
arugula, clean leaves ½ oz wt    
Sherry Orange Vinaigrette ½ fl oz    
Potato Onion Tortilla 2 slices 1/12 cut    
Tomato Bell Pepper Relish 2 TBSP    
Italian parsley, minced ½ tsp    
       

Zig zag aioli across plate.

Toss arugula in vinaigrette, place in top left corner.

Stack tortilla across base of arugula.

Drape relish between tortilla wedges.

Sprinkle plate with parsley and serve.
