spinach ½" wide ribbons 1 oz wt    
Sherry Poached Prawns 16-20, cut in ½ lengthwise 3 each    
Ouzo Prawn Paste 1 fl oz    
tomato, diced ¼" 2 TBSP    
feta, crumbled 1 oz wt    
Herbed Bread Crumbs 1 TBSP    
Lemon Wheels 2 each    
green onion, minced 1 tsp    

In the bottom of a small baking dish, pack the spinach ribbons.

Arrange the prawn halves atop of it.

Spoon on your prawn sludge.

Coat with diced tomatoes, then cheese and then bread crumbs.

Bake at 500° for 5 minutes.

Sprinkle with green onions.

Garnish with the lemon slices.

Serve on top of two cheese leaves on a small square plate.
