Specs

white wine ¼ cup    
sherry wine ½ cup    
prawns (21-25 peel on) 5 lb    
salt & pepper mix ½ tsp    

Place all ingredients in 2" hotel pan and toss to mix well.

Place in steamer for 1 - 2 minutes. Remove from steamer and stir gently and thoroughly.

Return prawns to steamer and cook until just barely done (prawns will continue to cook when removed).

IMMEDIATELY place hotel pan in walk-in to cool.

When cooled, peel prawns.

When prawns and poaching liquid are both cool place prawns back in poaching liquid to hold.

Place in a clean container. Label, date, initial and refrigerate.
