A:

olive oil

2 TBSP 4 TBSP  
shallots, chopped ½ cup 1 cup  
salt mix 3:1 1 tsp 2 tsp  
black pepper, fresh ground, fine ¼ tsp ½ tsp  
B:

Marsala wine

1 ½ cups 3 cups  
C:

Veal/Pork Demi

4 cups 8 cups  
Creme Fraiche 1 cup 2 cups  
thyme, fresh minced 2 tsp 4 tsp  
D:

arrowroot

2 tsp 4 tsp  
water 2 TBSP ¼ cup  
E:

Marsala wine

2 TBSP ¼ cup  
       

Sauté "A" ingredients in saucepan for 2 minutes.

Add "B" Marsala and burn off.

Add "C" and whisk to combine.

Dissolve "D" arrowroot in water and stir into sauce.

Whisk occasionally and let reduce until reduced by ¼ volume. Remove from heat.

Add "E" Marsala to refresh the Marsala flavor.

Place in a clean container. Label, date, initial and refrigerate.
