11 cups



cream 1/2 gallon    
yogurt 3 cups    

Place cream and yogurt into 6" third pan. Whisk well until no lumps of yogurt remain.

Cover top with double layer of cheesecloth and tie with string.

Leave out at room temperature at least 12 hours or overnight.

Remove cheesecloth, stir, cover with a lid and refrigerate.
