Sensitivity: Be sure to lay shiny side of leaf down, and lay lamb on top. When you roll it, the nice side of the leaf will show.

lamb loin, trimmed 6 ½ oz piece    
serrano ham, thinly sliced ½ oz    
Mortadella Paste 4 tsp(rounded TBSP)    
grape leaves, stems trimmed 3-4 each as needed    

On a cutting board, layer grape leaves over lapping slightly, shiny side down.

Put sliced serrano ham in middle of leaves.

Smear ½ mortadella paste on each side of lamb loin.

Put lamb on serrano ham. Fold in the sides of grape leaves and roll up tightly (like a burrito) covering all the lamb with the leaves.

Place in clean container. Label, date, initial and refrigerate.
