Sensitivity: Check crab meat for shell fragments. Do not overmix.

crab meat, flaked (check for shell fragments) 1 lb wt 2 lb wt  
artichokes, canned, diced ½" 1 cup 2 cups  
celery, diced 1/8" 1 cup 2 cups  
onion, diced 1/8" ¼ cup ½ cup  
Mayonnaise 1 cup 2 cups  
chives, chopped 2 TBSP ¼ cup  
black pepper, fresh ground fine ¼ tsp ½ tsp  
lemon juice, fresh squeezed 1 TBSP 2 TBSP  

In a stainless steel bowl combine everything except crab and artichokes. Mix well.

Gently fold in artichokes and crab and mix until well coated.

Place in a clean container. Label, date, initial and refrigerate.
