Shellfish Cooking Liquid(see recipe Stocks & Broths) 3 cups 6 cups  
singing scallops 2 ½ lb wt 5 lb w  
Dressing Ingredients:

Italian parsley minced

¼ cup ½ cup  
lemon zest, fresh minced 2 TBSP ¼ cup  
orange zest, fresh minced 2 TBSP ¼ cup  
cayenne 1/8 tsp ¼ tsp  
salt mix 3:1 ¼ tsp ½ tsp  
orange juice, fresh 2 TBSP ¼ cup  
Champagne Vinaigrette ½ cup 1 cup  

Bring shellfish cooking liquid to boil in medium saucepan.

Add scallops to boiling liquid poach 1 minute until scallops open wide. Strain,
(reserve cooking liquid for one more use).

Place scallops on parchment lined sheetpan in walk in to cool.

In stainless bowl, whisk together dressing ingredients.

Toss cold scallops in dressing to coat.
