Season flattop grill with clarified butter.
Ladle 3 - 3 oz pancakes onto grill.
Put 9 blueberries in each pancake (be sure to spread them out over the surface so there is a blueberry in every bite).
Cook until large bubbles form on the outside rim and flip carefully.
Cook until done.
Serve with first cooked side up stacked.
Plate fruit garnish at 12:00. Serve
Serve with warm syrup in a pitcher on the side.
