Sensitivity: Use nice ripe tomatoes! Keep tomatoes at room temperature to ripen. (Not in walk-in)


2 ¼ cups

6 ¾ cups


tomatoes, peeled, seeded and finely chopped, by hand 2 cups/1lb wt 6 cups  
extra virgin olive oil ¼ cup ¾ cup  
black pepper, fresh ground fine ¼ tsp ¾ tsp  
salt 3:1 1 ½ tsp 4 ½ tsp  
sugar 1 tsp 1 TBSP  
tomato paste 1 tsp 1 TBSP  

In stainless steel bowl gently stir all ingredients together to blend well.

Place in a clean container. Label, date, initial and refrigerate.
