1 gallon



egg yolks 34 each    
sugar, white 2 cups    
marsala 1 7/8 cup    
marscapone 3 tubs/51 oz wt   Galbani

Whisk together egg yolks and sugar until pale yellow in heavy bowl.

Add marsala and cook in double boiler, whisking continuously till 180 .

Whisk in marscapone.

Cool in ice bath stirring occasionally.

Reserve for preparation of full dessert. It is recommended that you get all your ingredients together
before attempting to make the final product.
