Ingredients

2 cups 15 oz wt

4 cups 30 oz wt

Specs

A:

onion, diced 1/2"

¼ cup ½ cup  
garlic, fresh minced 1 tsp 2 tsp  
olive oil 1 TBSP 2 TBSP  
salt mix 3:1 ½ tsp 1 tsp  
red chili flakes ¼ tsp ½ tsp  
B:

tomato pureed

1 cup 2 cups Alta Cucina
lemon zest 1½ tsp 2 tsp  
rosemary, fresh chopped 1 tsp 2 tsp  
C:

Italian parsley, minced

1 TBSP 2 TBSP  
octopus, cooked, sliced paper thin 8 oz wt 1 lb wt  
       

Saute "A" ingredients in medium saute pan over med.-high heat, until onions are translucent, about 3-5 minutes.

Add "B" ingredients and cook 5 more minutes.

Remove from heat let cool to room temperature, toss sauce with "C" ingredients, place in a clean container.

Label, date, initial and refrigerate.
