Sensitivity: May need to be done more than once per shift.
Make sure to have greens prepped and lemon zest on hand.


1 cup



olive oil 2 TBSP    
garlic 2 TBSP    
red chili flakes ¼ tsp    
broccoli raab, chopped 9 oz wt    
lemon zest 1/8 tsp    
peppercorn ground 1/8 tsp    
salt mix 3:1 ¼ tsp    

In a large sauté pan heat oil.

Add garlic, chili’s, broccoli raab, lemon zest, salt and pepper mix thoroughly and cook until greens are wilted.

Cool place in a clean container. Label, date, initial and refrigerate.

Serve at room temperature.
