Ingredients

1 full hotel pan

 

Specs

purple potatoes, peeled & thinly sliced 6 lb wt    
Caramelized Onions (see recipe Procedures) 1 lb wt    
Cream, heavy whipping ½ gal    
parmesan, grated 2 cups    
salt mix 3:1 1 TBSP    
pepper, fresh ground 1 tsp    
       

Butter a full hotel pan.

Layer ½ sliced potatoes in bottom.

Spread caramelized onions on top.

Spread rest of potatoes.

In a bowl, mix cream, parmesan, salt and pepper.

Pour over potato/onions.

Cover with foil and bake for 45 minutes at 350° .

Uncover and bake at 400° for 25 minutes.
