Place pancetta wheels on parchment lined sheet pan.
Place another sheet of parchment on top.
Invert large rack and place upside down onto sheet pan of pancetta (to weigh down).
Bake at 300į convection oven, fan on, for 10-15 minutes until crisp and browned.
Drain on absorbent towels.
Place in a clean container. Label, date, initial and refrigerate.
