8 oz wt 1 ¾ cups

24 oz wt 5 ¼ cups


roma tomatoes, whole 5 lb 15 lb  
salt mix 3:1 1 tsp 1 TBSP  
black pepper, fresh ground fine ¼ tsp ¾ tsp  

Cut top off of tomato, cut in half lengthwise and scoop out seeds. Sprinkle with salt and pepper and place cut side up on parchment lined sheetpans. Place in 200° convection oven, fan on, for 2 hours until dry and leathery.

Let cool at room temperature then place in clean container. Label, date, initial and refrigerate.
