Sensitivity: Be sure to smash through Sieve until no juice is left.


2 1/2 cups



sweet peas, shelled, blanched 4 cups    
water 1 3/4 cups    
lemon zest, fresh minced 1/2 tsp    
salt mix 3:1 1/2 tsp    
white pepper, fine ground 1/4 tsp    
mint leaves, chopped 2 TBSP    
white sugar 1 tsp    

Place all ingredients in blender and puree until very smooth

Sieve through fine china cap until no juices left. Discard pulp. Save puree.

Place in a clean container. Label, date, initial and refrigerate.
