gelatin sheets 5 each    
water cup    
cream 2 cups    
sugar 1 cup    
sour cream 3 cups    
marscapone 6 fl oz    
vanilla extract 1 TBSP    
fresh lemon juice 2 TBSP    
lemon zest, finely minced 4 tsp    

Break gelatin sheets in half and place in a small bowl with water to soak.

Soak until the gelatin is soft. Then place bowl over a burner on low heat for a couple of seconds until gelatin is melted.

Meanwhile, in a large bowl whisk the remaining ingredients together with the gelatin and place over a pan of simmering water.

Whisk mixture until it is smooth and hot.

Ladle 6 fl oz in each glass custard dish.

Place custards on half sheet pans and cover with plastic wrap be sure not to let the wrap touch the top of custards.

Date and label the custards.

Refrigerate overnight or a minimum of 12 hours before serving.
