Sensitivity:  Toast cumin lightly in sauté pan until just fragrant.

Ingredients

2 ¾ cups

5 ½ cups

Specs

harissa paste 140 gram can 3 cans  
cumin, ground, toasted ¾ cup 2 ¼ cups  
vinegar, white wine 1 cup 3 cups  
garlic, fresh minced ¼ cup ¾ cups  
celery seed, whole 1 TBSP 3 TBSP  
cinnamon, ground ½ tsp 1 ½ tsp  
salt mix 3:1 1 TBSP 3 TBSP  
orange juice, fresh ¼ cup ¾ cup  
honey 1 TBSP 3 TBSP  
orange zest, minced 2 tsp 2 TBSP  
       
olive oil 1 cup 3 cups  
       

Place all ingredients except olive oil in pan and bring to boil.

Let boil 1 minute.

Add oil and stir well to combine.

Let cool then place in a clean container. Label, date, initial and refrigerate.
