ricotta, whole milk 15 lb    
Quillisascut goat cheese 36 oz/2 tubs    
Quillisascut black pepper/garlic manchego, grated 6 lb    
Quillisascut smoked ricotta salata, grated 4 lb    
salt mix 3:1 1 TBSP,1 tsp    
nutmeg, freshly ground Ĺ tsp    
black pepper, freshly ground 1 tsp    

Mix all ingredients in a large bowl.

Be sure to mix thoroughly "No Grated Cheese Pocket!!!"

Place in a clean container. Label, date, initial and refrigerate.
