whole eggplant 5 ea/82 oz wt 15 each  

Roast whole eggplant on grill until the skin is black.

Bake on a sheet pan in 350į convection oven for 30 minutes.

Cool, peel and coarsely chop.

Place in a china cap for 2 - 3 hours until well drained.

Place in clean container. Label, date, initial and refrigerate.

Use as needed.
