no wheat bread      
       

Place bread bits and pieces on a sheet pan and place in 300° convection oven, fan on for 10-15 minutes, until dry and crunchy but not browned.

Process in robot coupe until bread crumbs form.

Do not overload robot coupe or you will not process bread evenly.

Place crumbs in shallow layer on sheet pan and return to oven for 5-10 minutes, until very dry and not clumpy.

Store in an airtight container at room temperature
