1 1/8 cup/9 oz wt

6 ¾ cups


red onion, ¼" thick half moon slices 1 lb (wt) 6 lb  
balsamic vinegar 2 TBSP ¾ cup  
olive oil 1 TBSP 6 TBSP  
salt mix 3:1 1 tsp 6 tsp  
black pepper, fresh ground ¼ tsp 1½ tsp  

Place onions in 2" hotel pans.

Sprinkle with remaining ingredients to coat well

Cover with foil, sealing edges well.

Place in 350° convection oven, fan on, and bake 45 minutes until tender and translucent.

Remove foil and place in walk-in to cool.

Place in a clean container. Label, date, initial and refrigerate.
