Sensitivity: Do not brown apples.


8 cups



Braeburn apples, peeled and diced ½" 12 each    
apple juice, fresh 1 cup    
cinnamon, ground 1 tsp    
nutmeg, freshly ground ¼ tsp    
clarified butter ½ cup    
sugar, granulated ½ cup    

In a large braising pan heat clarified butter.

Add apples and all other ingredients.

Cook until apples are cooked and juice is reduced to a syrup.

Store in a metal pan and keep warm or place in a clean container. Label, date and refrigerate.
